Last Day

Today is our last full day in Mississippi. I spent it with mom, Sean, Shaunta, Nikki, and all the kids! We spent the majority of our day at walmart getting pictures copied, things for the new baby, candy, and food food food. I got a Sugarland CD that I am very excited about and that partini game for $5.00. Yes, I said $5.00! Now we are finishing up cooking dinner and waiting for everyone else to get home for the night. I have a new favorite drink of choice, Smirnoff. mmmhmmm. :)

This week Mom, Sean, and I have been in Mississippi visiting family. This has been our first trip down here since Papaw passed on April 7th. It's been a little difficult for all of us. We had planned a family reunion before the past months events happened, and we decided to follow through with the plans. We arrived Thursday night and cooked all day Friday and Saturday morning, then the reunion was on Saturday. Needless to say, things have been crazy in my Aunt's house. There are 3 different families staying here, with 2 bathrooms, one kitchen table, and two cable t.v., and I would not have it any other way.


There are a ton of things that people don't understand about our family, but the main thing is how close we all are. I love my family, and I love the family ties and relationships that each of us have with each other. Others will never understand, and we all realize this, but it doesn't change a thing.

After Papaw passed away I feel like we all grew closer together in a way. Or, maybe it's just that I am getting older, wiser, and actually realizing this now.

Today, my cousin Shaunta and I were talking on our 2-hour ride back to my Aunt's and she said something that really got me. We were talking about faith, marriage, and family. She was explaining to me how faith is like family in that once you believe in God, you never lose that faith or that tie with God, and with family, you might fall away from them or get angry with them, but it doesn't matter, you are still family. My family is a strong family with a strong bond, and I kinda like the fact that no one understands that. It makes us who we are!


For the record, everytime we are all together and laughing, I know that Papaw left part of himself behind in each one of us.





Down here in the SOUTH certain things are done. These certain things go as followed:


Sitting on the front porch for hours
Fourwheeler/dirtbike riding in the cow pastures
Family reunions in blue tin buildings in the middle of trailer/RV park with no a.c.
Sleeping on air matresses with multiple people
Spending a whole day in the kitchen making potato salad and desserts
Seasoning chicken with your uncle, a huge cooler, and the water hose
Having to take care of TONS of bug bites on each other
Killing TONS of bugs
and
Wishing we had some fried green tomatoes in order to fulfill our nights....






Fried Green Tomatoes:

Ingredients
3 medium, firm green tomatoes1/2 cup all-purpose flour1/4 cup milk2 beaten eggs2/3 cup fine dry bread crumbs or cornmeal1/4 cup olive oil1/2 teaspoon salt1/4 teaspoon pepper
Method



1 Cut unpeeled tomatoes into 1/2 inch slices. Sprinkle slices with salt and pepper. Let tomato slices stand for 15 minutes. Meanwhile, place flour, milk, eggs, and bread crumbs in separate shallow dishes.



2 Heat 2 Tbsp of olive oil in a skillet on medium heat. Dip tomato slices in milk, then flour, then eggs, then bread crumbs. In the skillet, fry half of the coated tomato slices at a time, for 4-6 minutes on each side or until brown. As you cook the rest of the tomatoes, add olive oil as needed. Season to taste with salt and pepper.
















A New Start

Hi!
Awhile ago I tried to enter the blogging world, and it didn't work out so well.
I have decided to give it another shot since it's Summer and I have so much extra time lately. I am very excited to "re"-begin this blogging journey! I'm still trying to figure everything out so just bare with me.
